Pasta with black winter truffles

Ingredients - Serves 4 

- 200g of fresh spaghetti or linguine 

- 80g fresh Trufas La Esperanza Black Winter Truffles

- 2/3 cloves of garlic

- 30g unsalted butter

- 150g Baby Bella Mushrooms 

- 20g fresh Parmesan

-  Salt and Pepper to taste 


Bring a large pan of water to the boil, add a tsp of salt. Whilst the water is heating, slice the mushrooms. Heat a frying pan and add the butter, once the butter has melted and starts to sizzle, add the garlic, cook slowly until soft. Then add the sliced mushrooms and toss in the garlic butter for a few minutes until they begin to soften. Add the pasta to the boiling water and cook until al dente.  Once cooked, drain and add the mushroom mixture. Stir together adding the salt, pepper and Parmesan. Finish with the shaved truffles, enjoy!
